Gazpacho

Ingredients

  • 3 medium tomatoes, (peeled, if desired) seeded and finely chopped
  • 1 cup vegetable juice cocktail
  • 1 cup finely-chopped cucumber
  • 1/2 cup beef broth
  • 3/4 cup chopped green pepper
  • 1/4 cup finely-chopped onion
  • 1 large clove garlic, minced
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 to 2 tablespoons chopped fresh basil or 1 tablespoon chopped fresh dill
  • 1 teaspoon salt
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon cumin
  • 1/2 teaspoon Chipotle flavored or plain red pepper sauce
  • Grated lime peel, optional

Directions

Combine all ingredients in large bowl; mix well. Cover and chill at least 2 hours to blend flavors. Garnish with grated lime peel, if desired.

TIP: If desired, blend ingredients in food processor or blender for a smoother texture. Garnish with cucumber slices.
